A delicious combination of ingredients and let me tell you it’s smells amazing while it’s cooking. Coming in at £2.50 per portion and a brilliant crowd pleaser for the whole family… what are you waiting for?
Marinade
Juice 1/2 lemon
3 cloves garlic - finely chopped or crushed
3 teaspoons honey or 1 teaspoon sugar
3 teaspoons smoked paprika
1 teaspoon dried oregano
1/2 tablespoons oil
Salt & pepper
8 chicken thighs
2 sweet potatoes - each cut into 8-10 wedges
2 corn on the cobs - each cut in half
3 whole chillies - optional
Coriander - optional
METHOD
Preheat the oven to 200 degrees celsius (conventional) 180 degrees celsius (fan)
Mix the marinade ingredients together. Add everything to a large roasting tray. Coat in the marinade. Drizzle with a little extra oil, season and roast for 35-45 minutes.
