Instructions
Step 1
Preheat the oven to 180°C/350°F/gas mark 4.
Step 2
Place the onion pieces in a food processor and chop until finely minced (ground).
Step 3
Add the carrot, breadcrumbs, tomato purée (paste), herbs and egg.
Step 4
Process for 5-10 seconds.
Step 5
Add the minced beef and process for a further 5-10 seconds to make a finer mince and to mix well.
Step 6
Shape the mixture into a loaf in a baking tray and bake uncovered for 45 minutes.
Step 7
Serve the meatloaf in slices and cover with the Tomato and Red Pepper Sauce.
Step 8
Serve with small boiled potatoes and broccoli florets.
