Baked Fish with Tomatoes and Olives

I would serve this with rice, green veg and bread You could use cherry tomatoes from a tin to make the sauce more tomatoey

Instructions

Step 1
1. Preheat the oven to 200 deg * C Fan/Gas Mark 7.
Step 2
2. Prepare your fish by making sure you remove any scales if you can see any. Use skinless, boneless fish if you can.

3. Take a large roasting tray and a length of foil twice the length of the tray, then lay the foil evenly across it.

4. Cut the butter into small pieces and lay these out on the foil.
Step 5
5. Place the fillets of fish onto the butter, followed by the garlic, followed by the garlic, wine, tomatoes and olives
Step 6
6. Fold the excess foil over the top and wrap tightly to form a well-sealed parcel.
Step 7
7. Bake in the oven for 20-30 minutes - the cooking time will depend on the thickness of the fish fillets you use. Don't forget to add on extra cooking time if you are using frozen fish.
