Dolly Parton's Coleslaw

Dolly Parton's Coleslaw
I put this together based on an article that carefully avoided a bit of detail. Amounts of various ingredients and such, mostly. Based on what I read, though, you can play with this quite a lot and customize to your liking.
2lb of cabbage was "a good amount for the amount of dressing" so I stuck with that. Advice that you can just toss in the whole bell pepper was also included. The only changes I made to the provided ingredients list was labeling sugar as optional and specifying a sweet onion. I like to avoid as much added sugar as I can, and I'd like to try this without it.
Other advice I suggest you heed; salt the cabbage at least, if not all the veggies, to draw out excess moisture and keep your slaw creamy.

Ingredients
12 servings
Veggies
1 x 2 lbgreen cabbage
shredded
1sweet onion
finely minced
1carrot
grated
0.5red bell pepper
diced
1 Tbspdill pickle
chopped fine
Dressing
Instructions
Step 1
Shred the cabbage with a mandolin if you have one, or otherwise prepare it in the manner you prefer.
Step 2
Prep the rest of the veg and salt it all for at least 15 minutes to draw out moisture. I use a colander to allow for drainage.
Step 3
Whisk together all the dressing ingredients to let them blend
Step 4
When the veg is done draining, check for moisture on the bottom and dry with paper towel if necessary, then add to a large mixing bowl, pour over the dressing, and mix thoroughly with tongs.
