Instructions
Step 1
Soak the dried mushrooms in boiling water for 15 minutes
Step 2
Place a large pan over medium heat with olive oil.
Step 3
Once warm, add the chopped onions, garlic and a pinch of salt. Cook for 5-10 minutes until soft.

Add the mushrooms without the water and sauté for 3-4 minutes.

Add in the rosemary, thyme, miso paste and rice. Cook for another 5 minutes.

Step 6
Add the mushroom water, nutritional yeast and almond milk. Bring to the boil and then reduce the heat.
Step 7
Simmer for 45-50 minutes until thick and creamy, adding a dash of water as needed.
