Instructions
Step 1
Brown beef. Remove beef from pot and drain. Continue to use same pot.
Step 2
Sauté carrots first in butter and olive oil. Then add celery. Then add onions and hatch peppers. Then add garlic. Heavily salt and pepper. Continuously stir until onions are translucent.
Step 3
Add flour. Stir for 1 minute.
Step 4
Add chicken broth. Stir until combined.
Step 5
Add peeled and cubed potatoes. Stir frequently. Wait until liquid is boiling and then turn down to medium. Cook until potatoes are tender. Add beef back into soup.
Step 6
Add heavy cream and spices. Add cubed Velveeta. Simmer until Velveeta is melted.
Step 7
Taste and re-season. Heavy black pepper flavor is preferable.
