Ingredients

1 teaspoonolive oil
1 lb93 % lean ground beef
0.5onion
diced
4cloves garlic
minced
0.5red bell pepper
seeded and diced
2 Ttomato paste
2 Tablespoonchili powder
1 teaspooncumin powder
½ teaspoonpaprika
¼ teaspoonoregano
14.5can diced tomatoes
4 cupslow sodium beef broth
1 cuphalf and half
16 ozmacaroni
3 cupsshredded cheddar cheese
Instructions
Step 1
1. Using a large pot (5 or (Quarts) with a lid add olive oil and heat, over medium-high heat.
Step 2
2. Add ground beef. Cook until browned
Step 3
3. Stir in onion, garlic, bell pepper, tomato paste, chili powder, cumin, paprika, oregano, and sea salt. Cook until onion and pepper start to soften and garlic becomes fragrant.
Step 4
4. Add diced tomatoes with juice, beef stock, half and half, and macaroni. Stir until combined.
Step 5
5. Bring to a simmer, then reduce heat to low and cover. Cook 13-15 mins.
Step 6
6. Turn off heat, stir in cheese.
