Step 1
Combine yeast and warm water, then set aside for 5 to 10 mins for it to become foamy.

Now that your yeast mixture is foamy, add your scalded milk, melted butter, eggs, vanilla, nutmeg, and sugar into your yeast mixture.
Step 3
Add 3 cups of your flour, salt, and nutmeg into that wet mixture, then whisk until completely combined.
Step 4
Switch to a dough hook or your clean hands, add the remaining flour (4.5 cups), then knead/mix until smooth.
Step 5
Place the dough into a well-oiled bowl, then cover and let rise for one hour or until doubled in size.
Step 6
Once the dough has risen roll it out onto a floured surface.

Step 7
Use a scale or circle cutter to make uniform portions of your dough into a donut shape.
Step 8
Cover the donuts with a cloth or plastic wrap and let rise for an additional 30 min.
Step 9
While you wait slowly heat your vegetable oil to 325 degrees F.

Step 10
Fry the doughnuts until golden brown on both sides, be mindful of oil temperature.
Step 11
Transfer cooked donuts to a wire rack to cool, before adding fillings or rolling in sugar.
