Instructions

Step 1
Preheat oven to 180°C / Gas make 4.
Step 2
Sift flour, bicarb and salt into a large mixing bowl.
Step 3
In a separate bowl, cream the butter and sugar together until light and fluffy.
Step 4
Add eggs, mashed bananas, milk, orange juice and vanilla extract to the butter and sugar. Mix well.
Step 5
Fold in flour mixture to wet ingredients. Add nutmeg and cinnamon to your taste.
Step 6
Grease a 20cm x 12.5cm (8in x 5in) pan.
Step 7
Transfer batter to pan and place in oven. Bake for about 1 hour or until golden brown. Use the tooth pick method to ensure it is cooked all the way through.
Step 8
Remove from over and let it cool in pan for a few minutes.
Step 9
Remove from pan and transfer to wire rack tray or chopping board to cool completely before serving.
