3egg yolks

1 Tbspcornstarch

1 dlconcentrated elderflower cordial

1.5 dlheavy cream

2 Tbspgranulated sugar

Instructions
Step 1
Preheat the oven to 225°C. Place flour, sugar, and butter in a food processor and mix into a crumbly dough. Add the egg and quickly work it into a smooth pie dough. Press the dough into a pie dish, about 23 cm in diameter. Bake in the middle of the oven for about 20 minutes until the crust is fully baked.
Step 2
ELDERFLOWER CREAM: Mix the egg yolks and cornstarch in a saucepan. Add the elderflower cordial and 1 ½ dl cream.
Step 3
Gently simmer over low heat while whisking until the cream thickens. Remove the pan from the heat. Add the sugar and pour the cream into a bowl. Cover with plastic wrap directly on the surface and chill in the fridge for about 2 hours.
Step 4
Whip 1 ½ dl cream and gently fold it into the elderflower cream. Spread the cream into the pie crust and refrigerate for about 1 hour.
Step 5
Top the pie with strawberries and serve.
