Instructions
Step 1
Cut the tops off the bulbs of garlic and drizzle with olive oil. Season with salt and wrap in tin foil, Roast in the oven at 180c for 1 hour. Once soft and golden, remove from the oven and set aside.
Step 2
Finely chop the parsley and add it to a bowl with the butter. Add the chilli flakes and half of the parmesan. Squeeze the roasted garlic out of their skins, season with salt and whisk it all together.
Step 3
Cut the sourdough in half and spread the garlic butter along the base. Sprinkle the remaining parmesan and place on a baking tray. Bake in the oven for 15 minutes or until the parmesan starts to crisp. Cut into strips and enjoy.
