Step 1
Preheat oven to 390
Step 2
Finely dice onion. Put onion in large casserole with curry powder, vegetable, and rice. Mix to coat.
Step 3
Add cans of butter beans and coconut milk, frozen peas, and stock cube to casserole. Mix. Season with salt.
Step 4
Cut 1 block of paneer into bite-sized chunks and add.
Step 5
Bake for 25-30 minutes until rice absorbs all the liquid and paneer is golden in places
Step 6
In small mixing bowl, put 15g very finely chopped cilantro, finely chopped chili, grated ginger and garlic, and zest and juice of both limes. Season to taste with salt and mix.
Step 7
Use fork to fluff rice and serve with cilantro dressing on top of rice mixture.
