Instructions

Preheat oven to 350F

Step 1
Heat lg. cast iron skillet over med. heat; add butter & melt. Add sliced onions, allow to caramelize, stirring as they brown. Add fresh thyme, salt, & pepper, stirring to combine.
Step 2
Turn off heat under skillet; remove caramelized onions to bowl.
Step 3
Combine shredded cheeses in bowl. Stuff cheese & several spoonfuls onions into each chicken breasts; secure with toothpicks. (There should be about 1/4 cup or more of caramelized onions remaining.)
Step 4
Heat same skillet to med.-high heat & add olive oil & chicken breasts. Brown (though not cooked through) on all sides, carefully making sure filling stays inside. Turn off heat & remove to plate.
Step 5
Add remainder of onions & chicken stock to skillet; nestle chicken breasts on top with a few sprigs of fresh thyme.
Step 6
Bake (20 min.) until chicken has an internal temperature of 165F.
Step 7
Rest chicken, remove toothpicks, & serve with onions & pan juices.
