Step 1
Preheat oven to 425

In a large cast-iron pan, he olive oil over medium high heat.
Step 3
Season chicken thighs with salt and pepper on both sides
Step 4
Once olive oil is hot, add chicken thighs and sear until nicely browned on the first side, then flip and sear on other side.
Step 5
Remove chicken from pan and set aside
Step 6
Add brussels sprouts to cast-iron pan and sauté until lightly browned
Step 7
Place chicken back into cast-iron pan with any juices chicken left behind
Step 8
Add grapes and shallots into cast iron pan
Step 9
Cook in oven for about 15 minutes until nicely browned and cooked through.
Step 10
Once finished cooking, remove from oven carefully and transfer all ingredients into a large deep serving dish. Leaving juices in cast iron pan
Step 11
Add butter to cast-iron pan and melt
Step 12
Add dried thyme, oregano and chicken broth to cast-iron pan
Step 13
Stir and boil until liquid is reduced by half
Step 14
Pour the sauce in serving dish over the chicken
