Instructions
Step 1
Boil potatoes whole until easily pierced with a knife. Allow to cool just enough to handle, cut into desired size pieces (e.g. quarter them)
Step 2
While potatoes are boiling, fry bacon. When crisp, remove from pan - save drippings.
Step 3
Saute shallots in bacon drippings until soft. Add broth, vinegar, mustard and sugar. Simmer to reduce by half.
Step 4
Add bacon and warm potatoes, mix to coat. Season with salt and pepper to taste. Garnish with chives, serve warm.
