Chimichurri

6cloves garlic
minced

2jalapenos
minced

¼ cupred wine vinegar

½ cupfresh flat leaf parsley
finely chopped

½ cupfresh oregano
finely chopped

3limes
juiced

1 cupolive oil

1 tspkosher salt

1 tspwhole black peppercorns
Pork
Instructions
Step 1
Combine all chimichurri ingredients in a bowl. Set aside to allow flavors to marry.
Step 2
Reserve ½ cup chimichurri for serving. Place remaining chimichurri and pork in a zip lock bag and refrigerate 30+ min. to marinate.
Step 3
Remove pork from marinade and wipe off excess. Season with salt and pepper and drizzle with olive oil. Grill approximately 4 min. per side.
Step 4
Rest at least 5 min. Slice and serve, drizzling lime juice and chimichurri over the top.
