Instructions
Step 1
Start by blooming the yeast, by adding it to the water with the tsp of sugar, mixing well with a spoon and leaving it for 10 minutes.
Step 2
In a big bowl, add the flour and the salt and mix quickly. Add the water-yeast mixture and start kneading with your hands. Do so continuously for 10 minutes
Step 3
In another lightly oiled or buttered bowl, transfer the dough and let rise for 30 minutes, covered with a tea towel
Step 4
After the 30 minutes, divide the dough in 8 ~100g pieces, and roll them into small balls with your hands. Leave them on a counter to rise, covered with the towel, for another 30 minutes. Let them rise on an oven rack with parchment paper for another 10-15 minutes
Step 5
Take two balls and merge them together by pinching them. With the back of a knife, make a deep line from side to side going through the middle, to give them their typical shape. At this point, preheat the oven to 220°C
Step 6
Take a casserole dish and fill it with boiling water. Put this at the bottom of your oven to allow for steam to form while cooking the bread. Add the tray with the dough in the middle of the oven and cook for around 15 minutes, until browning on top. Let cool completely before serving!
