Instructions
Step 1
Soak pinto beans in water overnight.
Step 2
Sauté bacon in instant and set aside. Add sliced andouille to instant pot and cook for 3-4 mins or until edges of sausage become darkened and caramelized. Remove sausage and set aside.
Step 3
Add onions and celery in instant pot. Cook for 5-6 minutes or until vegetables become dark and caramelized.
Step 4
Add soak beans into instant pot and stir. Return bacon and sausage to the instant pot and stir. Add water and bouillon to the pot. Add seasonings.
Step 5
Close instant pot lid and set to 25 minutes on the high pressure cook setting. Allow instant pot to natural release for 15 minutes before releasing pressure.
Step 6
Serve with 1/3 cup rice.
