Instructions

For chicken

Step 1
Your gonna want to start off with boiling your chicken breasts in a pot with water fully covering your chicken, 4 bay leaves and 2 tablespoons of salt. (or to your taste) Cover with a lid
Step 2
Once your chicken comes to a boil, take off the lid and let it boil for about 30 mins (use a fork to cut into your chicken to make sure the middle is cooked).
Step 3
When your chicken is fully cooked, take it out and place it into a deep bowl. let it rest for a couple of minutes and then shred it.

For the Salsa

Step 4
Peal off your tomatillo and cute the top stem of your jalapeños. Take to your sink and rinse.
Step 5
In a medium size pot, throw in your tomatillos, Jalapeños and a 1/4 cut of onion. Top off with water till everything is fully submerged.
Step 6
Once your pot come to a boil, leave for 15 mins till your tomatoes and jalapeños become soft (they’ll lighten up in color, Meaning they’re ready to go).
Step 7
Drain out the water and put the tomatillo’s and Jalapeños into your blender. Add a tablespoon of chicken buillon, a hand bunch of cilantro and a tablespoon of salt.
Step 8
Once blend it, grab a non stick frying pan and put 2 tablespoons of olive oil. Once the oil is heated throw in your sauce and stir around for 10 minutes
Step 9
Turn off your burner and put it aside

For Enchiladas

Step 10
Preheat your oven to 400 degrees.
Step 11
Heat up Approximately 15-20 tortillas with olive oil drizzled in on both sides of the tortilla. ( Don’t fully heat up, you wan them soft and tender to make it easier to roll)

Grab a oven proof casserole flat bowl to start adding your tortillas.
Step 13
For a clean and quick/easy way to adding your sauce, use a spatula and cover your tortilla with the sauce on both sides.
Step 14
Add your chicken and keep in on one side of the tortilla and start rollin in your tortilla nice and tight.
Step 15
Once your pan if full of enchiladas top it off with Monterey shredded cheese to your liking.
Step 16
Throw your enchiladas into the oven for 15 minutes
Step 17
Top off with shredded lettuce, grated queso fresco and sour cream.
