MEXICAN MEALS FOR WEIGHT LOSS: TOSTADAS DE TINGA VERDE đź’š I was recently introduced to Tinga verde & I have become such a fan! IThis dish is so easy to make, high protein, and low carb. Enjoy it in burritos, quesadillas, or my current obsession - tostadas!

Instructions

Step 1
1. Bring water to a boil and add chicken breast, 1 tbsp salt, bay leaves, 1/4 onion, and 2 garlic cloves. Bring down to a simmer and boil for 20-30 minutes depending on size of chicken.

2. While chicken cooks, roast tomatillos, 3 garlic cloves, poblano pepper , 1/4 onion (or omit & use from chicken), and serrano peppers using your preferred method. (Air fry at 375° F for 10 minutes)

3. Slice the remaining part of the onion

4. Once the vegetables are roasted add to a blender with 1/2 c water from the chicken, handful of cilantro, and low sodium chicken bouillon. Put to the side.

5. Once chicken is cook, shred using your preferred method.
Step 6
6. Grease a pan with oil spray and add sliced onions. Cook for 3-4 minutes or until translucent.
Step 7
7. Add in chicken and mix well.
Step 8
8. Bring heat down to a simmer and add in salsa. Cook for 10 minutes.

9. Air fryer tostadas: Air fry tortillas at 390° F for 4 minutes, flip, and cook for an additional 3 minutes. (The tortilla will fly if you don’t put it under the tray or weigh it down with an air fryer safe dish)

10. ONE SERVING OF TOSTADAS: 3 tostadas. Divide amongst the 3: 5 oz tinga, 50 g nonfat Greek yogurt, 1/2 c shredded lettuce, & 28 G queso fresco
