After trial and error, I've finally got my bird down pat. Stuffed or unstuffed, this is the juiciest burd ever.

Step 1
Preheat oven to 450. Take the giblets out of bird & set aside in a saucepan with water. You will want to cook these, adding some butter & use this to baste. Loosen the skin & put 1/2 stick butter under the skin on both breasts. Top with salt & pepper. Take a piece of tin foil & make a triangle. Place the triangle on the breast, covering as much of the breast as possible. Place the turkey in a 450° oven for 20 minutes, then without taking the turkey out of the oven, turn the temperature down to 350° Aprox halfway through remove the tinfoil & baste bird every 20 minutes using giblets broth & butter 1st time & pan drippings thereafter. When the meat thermometer reaches 180° in thigh & 170° in the breast, remove from the oven. Takes 20 to 25 minutes per pound.. Let rest 30 minutes to really seal in juices
