Instructions

Step 1
Preheat oven to 350 (for 12 cupcakes, 325 for 20 minutes)
Step 2
Mix applesauce, 1 tbsp oil and brown sugar in a bowl. Spread onto bottom of 9 inch spring form pan (or 8 x 8 square pan) lined with parchment paper

Step 3
Place pineapple slices in the baking dish on top of the sugar mixture. If using the cherries, put one in the center of each pineapple ring and anywhere else you want.
Step 4
In a large bowl, mix all other ingredients well, stirring for at least 3 minutes.
Step 5
Pour flour mixture over pineapple slices carefully so the cherries don't migrate too much.
Step 6
Bake for 55 minutes.
Step 7
Let cool for 15 minutes and then carefully invert onto cooling rack perched upon a serving platter. Let cool completely before serving
