Instructions

Step 1
Season beef with salt and pepper. Seared in a pan on one side, then turn and roast until cooked medium. Slice beef thin.

To make gravy, mix drippings from beef with beef stock and shallots then bring to a simmer. Mix in roux and cook until gravy coats the back of a spoon.
