Instructions

Step 1
Preheat oven to 350°F and line a loaf pan with parchment.
Step 2
Beat eggs and sweetener for about 10 minutes.
Step 3
Gently mix in lemon juice and 1 tbsp lemon zest.
Step 4
Add 1/3 cup flour and mix until combined. Repeat with remaining flour.
Step 5
Pour batter into loaf pan and bake for 25-35 minutes, or until the surface is light brown and a toothpick inserted into the center comes out clean.
Step 6
Let cool completely before removing and slice into 8 equal pieces.
