Instructions
Step 1
1. Heat oil in pan and add finely chopped garlic to colour.
Step 2
2. Add liquid (1/3 wine, 2/3 water) until liquid is ~1cm deep (you may need more or less)

3. Add salt, chilli flakes but only 1/4 tbsp of parsley (keeping some for later).
Step 4
4. Bring to boil and simmer for 5 minutes.

5. Chop tomatoes in half, chop basil, grate lemon for zest, add to remaining parsley and add to pan.
Step 6
6. Place fish in pan, skin side down. Now add all of (5).
Step 7
7. Simmer each side for 5 minutes on a low heat and then done.
