Quiche (ham & cheese)
This is a basic recipe. Can change meat & cheese as desired or use cooked crab or shrimp.

Ingredients
6 servings
pie shell
9”, deep dish
5 ozcooked ham
sauté if too wet
6 ozshredded cheese
1/2 caramelized onion & cheddar from Trader Joe’s is so good
2shallots
large, minced
2 Tbspbutter
1red bell pepper
or orange, minced
4 ozmushrooms
sliced or quartered, if desired
5eggs
beaten
¾ cuphalf & half
½ cupheavy cream
Paprika
or parsley, for top
Instructions
Step 1
Preheat oven to 425F. If using frozen pie shell, inspect for cracks & repair with a little milk or water on fingers. Let sit on counter while making filing.
Sauté shallots in butter on low heat for a few minutes. Add peppers and/or sliced or quartered mushrooms & sauté for 5 minutes.
Sprinkle ham over bottom of crust.
Mix beaten eggs with 1/2 & 1/2 & cream, add cheese & shallot mixture.
Pour over ham.
Sprinkle with paprika.
Place quiche on baking sheet & cook at 425 for 15 minutes.
Rotate pan, reduce oven temperature to 300F.
Cook for 30 minutes, until knife inserted 1” from edge comes out clean.
Let rest 10 minutes before cutting.
