Step 1
-Place the milks, cream and vanilla in a medium pot over medium heat and bring to a very low simmer.
-While the milk mixture heats up, whisk together the egg yolks, sugars, spices and salt in a medium bowl. Whisk vigorously to combine well.
-When the milk mixture is at a simmer, turn off the heat. Using a ladle in one hand and a whisk in the other, slowly add some of the hot milk mixture to the egg mixture while whisking. this is called "tempering" the eggs.
-Do this with about half the milk mixture then transfer the tempered egg mixture back to the pot. Turn the heat on low and cook, stirring very frequently, until the mixture has thickened well. The eggnog should coat the back of a spoon or spatula and when you run your finger through it, it should leave a clear path.
-Strain the eggnog into a clean bowl, stir in the whiskey and chill, ideally over night.
-If the eggnog is too thick for your liking just adjust with more milk or whiskey to reach the consistency you like.
