Instructions
Step 1
In a small pot, boil the water. Add the brown sugar and mix well.
Step 2
When brown sugar is well combined, remove pot from heat. Add half of the tapioca starch and mix well. Small clumps are okay.
Step 3
Transfer hot mixture to a silicon sheet/starch dusted countertop to slowly incorporate the remaining tapioca starch. A slightly sticky dough should form.
Step 4
Knead the dough well and roll out into a 1cm thick sheet.
Step 5
Cut the dough into small 1x1x1 cm cubes, and roll into balls. Lightly coat rolled pearls in tapioca starch to prevent them from sticking together.
Step 6
Cool the tapioca pearls in boiling water until cooked through (typically 10-15 minutes). Strain boba and rinse with cold water to remove excess starch.
Step 7
Combine remaining brown sugar with a small amount of water in a separate pot, and heat until thoroughly combined. Use this liquid to temporarily store cooked tapioca pearls and sweeten your boba drink.
Step 8
Serve boba and syrup with drink of choice!
