Ingredients
4 servings
2 tablespoonsbutter
or margarine
1yellow onion
large, finely chopped
½ cupgreen bell pepper
chopped
1 clovegarlic
small, finely chopped
4 ouncesmushrooms
sliced
2 tablespoonsall-purpose flour
plain flour
2 cupscanned reduced-sodium chicken broth
½ cupmilk
salt
to taste
ground black pepper
to taste
1 tablespoonparsley
chopped
Instructions
Step 1
In a large saucepan, melt butter over moderate heat. Add onion, bell pepper, and garlic, sauté until the onion is soft, stirring occasionally, about 5 minutes. Stir in mushrooms and sauté until they are just wilted, about 3 minutes.
Step 2
Stir flour into the mushroom mixture until well mixed. Add chicken broth and bring the mixture to a boil over high heat, stirring until hickened, about 5 minutes.
Step 3
Reduce the heat to moderate. Add milk and season with salt and pepper. Heat the soup, stirring frequently, until it is hot but not oiling. Stir in parsley and serve immediately.
