Flourless Chocolate, Olive oil and Almond cake

Instructions

Step 1
Preheat oven to 180c
Step 2
Grease and line 20cm cake pan
Step 3
Carefully melt chocolate in pan or microwave
Step 4
whisk together with sugar and oil
Step 5
Add eggs to sugar and oil mix and beat until smooth
Step 6
Add melted chocolate to wet mix and stir together

In a separate bowl add cocoa, bicarb and salt and mix thoroughly
Step 8
Add dry mix into the wet mix and combine
Step 9
Add hot water to the batter slowly until smooth
Step 10
Pour into cake tin and bake for 40-50 mins, checking cake is cooked in the middle with a skewer. Let cake cool in pan. Then turn cake out onto wire rack

For the ganache: finely chop chocolate in a bowl. Heat cream in a pan until steaming but before boiling. Pour hot cream into chocolate and leave sit for 30 secs, then start slowly stirring together. Once cake is cool slowly pour the icing over the top letting it drip down the sides. Use a knife to even out if needed/desired. Leave the cake for 30 mins
