Ingredients
4 servings
2 tablespoonscooking oil
2 tablespoonsgreen curry paste
use 2 1/2 tablespoons if you want it spicy
1 cupwater
1 lbshrimp
jumbo, shelled, deveined, tail-on
½ cupcoconut milk
¾ tablespoonfish sauce
add more to taste
½ tablespoonpalm sugar
thai, preferred, or sugar, add more to taste
4 ozzucchinis
sliced and halved
2 ozred bell peppers
seeded and cut into strips
½ tablespooncilantro
chopped
Instructions
Step 1
Heat up a small pot on high heat and add the cooking oil. When it's heated, saute the green curry paste for 10 seconds before adding the water. Bring the water to boil and add the shrimps.
Step 2
As soon as the shrimps are cooked, add the coconut milk, fish sauce, palm sugar, zucchinis and red bell peppers. Cook for 1 minute, stir to mix well. Turn off the heat and add the chopped cilantro. Serve immediately.
