Instructions
Step 1
Using a tsp of oil, cook the onion, garlic, and chopped carrot until the onion softens.
Pan
Step 2
Add the celery and grated carrot to the pan, cook on a medium to high heat for five minutes
Step 3
Add the minced mushrooms, tomato paste and oregano, cook for another 3 minutes
Step 4
Add the tinned tomatoes and puy lentils. Mix thoroughly and cook on a high heat for five minutes
Step 5
Reduce to a low heat, add the red wine and mix everything. Simmer on low heat for 30 minutes.
Step 6
Turn off heat, allow to sit for 10 minutes before serving.
