Step 1
Heat oil in a saucepan, add shallots and garlic, cooking until soft.
Step 2
Add mushrooms and sauté for ~5 min. Add rinsed farro and toast for 2-3 minutes.
Step 3
Add wine and cook until reduced slightly, then add stock and thyme.
Step 4
Reduce heat and simmer for 40-45 min until farro is al dente. Add peas, Parmesan, and lemon juice to finish.
