200ggranulated sugar
10gvanilla extract
110gcanola oil
175gflour
1lemon zest
4gbaking powder
3gbaking soda
2gkosher salt
130gbuttermilk
150gblueberries

Step 1
In a medium bowl, whisk flour, light brown sugar, granulated sugar and salt.
Step 2
Drizzle butter over dry ingredients and fluff with a fork until clumpy and all flour is absorbed.

Mix eggs and sugar with a hand mixer on high for 5 minutes.
Step 4
Scrape sides of bowl, add vanilla extract and oil. Mix the on high for 1 minute.
Step 5
In a separate bowl whisk flour, baking powder, baking soda and salt. Mix until combined.
Step 6
Mix dry ingredients with wet ingredients and mix on low for 10 seconds.
Step 7
In a separate bowl stir together, blueberries, lemon zest and additional flour.
Step 8
Fold blueberry mixture into batter. Let rest preferably overnight (but you can get away with letting it rest for 2 hours).
Step 9
Top each muffin with streusel, spread evenly. Bake at 315 degrees for 17 minutes.
Step 10
Rotate pan and bake for another 17 minutes. Let cool at room temperature.
