Spicy Harissa Chorizo Stew With Butter Bean Mash

Instructions

Step 1
Boil a kettle
Step 2
Peel the potatoes and chop them into large, bite-sized pieces
Step 3
Add the chopped potatoes to a pot with plenty of boiled water and a generous pinch of salt and bring to the boil over a high heat

Once boiling, reduce the heat to medium and cook for 12-15 min or until fork-tender
Step 5
While the potatoes are cooking, deseed the red pepper[s] (scrape the seeds and pith out with a teaspoon) and cut into thin strips

Peel and finely slice the red onion[s]
Step 7
Peel and finely chop (or grate) the garlic
Step 8
Reboil half a kettle
Step 9
Heat a large, wide-based pan (preferably non-stick) with a drizzle of olive oil over a medium-high heat

Once hot, add the pepper strips and cook for 5 min or until they've softened slightly
Step 11
Once softened, reduce the heat to low, add the chopped garlic and sliced onion with a large pinch of sugar and cook for 15 min or until softened
Step 12
Meanwhile, dissolve the chicken stock mix in 250ml [500ml] boiled water and stir in the harissa paste – this is your spicy harissa stock

Heat a separate, large, wide based pan (preferably non-stick) over a medium heat
Step 14
Once hot, add the chorizo and cook for 8-10 min or until starting to crisp
Step 15
Once crisp, add the spicy harissa stock to the pepper and onion pan
Step 16
Increase the heat to high and cook for 2-5 min or until a glossy sauce forms – this is your spicy harissa stew
Step 17
Finely chop the parsley, including the stalks
Step 18
Once the potatoes are tender, add the butter beans (no need to drain!) to the same pot
Step 19
Return the pan to a high heat and cook for 3 min or until the beans are warmed through, then drain everything
Step 20
Add a knob of butter, a splash of milk and season with a pinch of salt and pepper, then mash until smooth – this is your butter bean mash
Step 21
Stir the chorizo and chopped parsley through the harissa stew – this is your spicy harissa chorizo stew
Step 22
Serve the spicy harissa chorizo stew over the butter bean mash
