Instructions
Step 1
Finely chop the coriander and garlic. Cut the tomatoes into parts. Put the minced meat in a large bowl and mix in half of the garlic, half of the cumin and 1⁄3 of the coriander. Form little meatballs of about 3-4cm wide with damp hands.
Step 2
Heat the oil in a snack pan and fry the balls for 3 min over medium heat. Add the rest of the garlic and fry over medium heat for 1 min. Add the canned tomatoes, the fresh tomato and and the chilli flakes. Let it stew with the lid on the pan for 10 min over low heat until the balls are cooked.
Step 3
Meanwhile, put the couscous with the rest of the cumin in a bowl. Add a chicken stock cube and crumble it over the couscous. Pour the boiling water over it and leave covered with a plate for 5 minutes. Blanche the peas for about 3 min in boiling, salted water. Stir the couscous loose with a fork and mix in the peas and 1⁄3 of the fresh coriander. Season with pepper.
Step 4
Stir the tahini into the sauce and season with pepper and possibly salt. Serve the balls in tomato-tahin sauce with the couscous and sprinkle with the rest of the coriander.
