Instructions
Step 1
Preheat oven 400f, put bananas in oven peel on & roast until outsides are browned. Let cool. Peel & place in electric mixer bowl.
Step 2
Add coconut oil, honey, cinnamon & salt. Mix on med-high until lightly blended.
Step 3
Add 3/4 of the oats, mix on med-low until oats are coated. Add walnuts, cont mixing. Add remaining oats until granola clumps.
Step 4
Spread onto two baking trays (covered w parchment paper), place in oven 10mins.
Step 5
Break up granola, flip to cook evenly. Cook 10-15mins more, until golden.
Step 6
Turn off oven & leave tray inside 15+ mins until granola crisps.
Step 7
If still soft after cools, put back in oven at 300F to remove moisture.
