Red Beans

1 linkandouille sausage
1 ft long

1 Tbspolive oil

0.5pepper
red or green, diced

3celery stalks
diced

1onion
medium, diced

0.5 lbred beans
unsoaked

3 ½ cwater

½ Tbspcreole seasoning

Instructions
Step 1
Heat pan with olive oil.




Step 2
Slice sausage and fry in hot pan. While sausage is cooking, dice the trinity.





Step 3
Remove the sausage in place in a glass pyrex container. Add the diced trinity to the hot pan and fry until brown. Then, remove the trinity and add it to the pyrex. Refrigerate overnight.






Step 4
In the morning, add the pyrex contents to the crockpot. Add red beans, water, and creole seasoning. Mix and cook on low for the whole workday (~8 hours).










Step 5
Rinse rice. Add rice, water, and bouillon to pressure cooker (InstaPot). Select rice setting, ensure the valve is closed, and let cook. When it beeps, release the valve and serve the rice when the cooker can be opened.




Step 6
Serve rice and top with beans.
