Instructions
Step 1
Dry roast the chiles in a stainless steel skillet with no oil.
Step 2
Toast over medium-high heat for 6 minutes, until they are fragrant but not smoking.
Step 3
Lower the heat and add just enough water to cover them. This will rehydrate the chiles.
Step 4
Cover with a lid while they simmer for 3 minutes. Then turn off the heat and let it rest for other 10 minutes.
Step 5
Blend on high speed for about 1 - 2 minute, until smooth. Your chili paste is ready.
