Instructions

Step 1
Start with 1.5 lbs of bone-in skin-on chicken thighs. I didn’t go boneless skinless as usual because the bone and skin add so much flavor and make it “juicy”. If you prefer to go leaner, you can use skinless or go with your favorite cut. But trust me, this makes a difference.
Step 2
Add chicken to a bowl, then add 2 tbsp olive oil, 2-3 pinches of salt, ground pepper,2 tbsp garlic powder, 1-1.5 tbsp smoked paprika, 1 tbsp oregano, 1/2 to 1 tsp cayenne pepper, and 1 tbsp baking powder. Give everything a really good massage to make sure the chicken is evenly coated on all sides.
Step 3
Cover the chicken, and let it soak in the flavors for 15 minutes if you can.
Step 4
I recommend airfrying these at 400F for 25 mins. Ideally you put them face down for 10 minutes, then flip and airfy for 15 mins skin side up. Time varies by airfryer and thickness of thighs, so just keep an eye on it. If using an oven, I recommend 400F for about 35 mins on a rack (+/- a few mins, until cooked through). Again time varies by oven and you want to get to 165F internal temp. It won’t be as crispy in the oven..
Step 5
I served these with a simple avocado crema I made, but this part is completely optional. In a food processor blend together 1/2 a large avocado, a large handful fresh cilantro, 2 cloves garlic, 2 tbsp greek yogurt (or sour cream), juice of 2 large limes, a couple pinches salt, 1 tbsp chile lime seasoning. Process well, then adjust to taste. I like mine more citrusy, so I almost always add more lime juice..
