Pickled Oyster Mushrooms

Pickling is an excellent cooking method for oyster mushrooms. They are ready in 15 minutes, and you can serve them hot, warm, or cold as a side dish, main meal, or appetizer.
Keep them refrigerated in a clean jar for up to a month. You need a 1.5-pint jar for every 2 pounds of fresh mushrooms.

Step 1

Prepare mushrooms. Separate clusters to individual mushrooms and slice large ones vertically to make them more or less uniformly sized.
Step 2

Prepare pickling marinade. Combine all ingredients in a saucepan. Bring them to simmer over high heat, reduce the heat, and let cook for 10 minutes. Strain the solids and return the marinade to the pan.
Step 3

Bring the marinade back to simmer and add mushrooms. Stir to coat them with hot marinade. Soon, the hot temperature, salt, and sugar will draw their juices, and all mushrooms will be submerged in a liquid. Stir them again to redistribute the marinade and let simmer for another 15 minutes.
Step 4

In 15 minutes, the liquid will cook down to about a half cup of concentrated syrup. Turn off the heat and add onions to the hot mushrooms. Stir, give them a few minutes to soften, and they are ready to serve!
Step 5

Serve quickly marinated oyster mushrooms hot, warm, or cold. They are suitable as a side dish with hot boiled potatoes or as an appetizer.
