Step 1
1. Turn on the oven and set to 350 F. Allow the oven time to preheat while you gather other ingredients and equipment.

2. In a heat-resistant bowl, weigh out 600 grams of tapioca flour on a kitchen scale. Set aside.
Step 3
3. After the water/milk/oil mixture boils, remove from heat immediately and pour mixture into the heat resistant bowl that contains the weighed out tapioca flour.

Using either a mixer with a bread hook attachment or a spoon begin stirring the liquid mixture and flour together.
Step 5
Set dough aside and wait till it has cooled sufficiently before adding eggs and cheese. CAUTION: Adding eggs and cheese too early will cause the eggs to cook prematurely.
Note: Dough is sufficiently cooled when it is comfortable to the touch.

Once the dough has cooled, crack the eggs and add to the dough.

Knead the mixture until the egg and cheese are completely mixed in. The combination will result in a sticky dough.
COOKING TIP: The dough will be sticky, but if in the next step the dough sticks to your hands even when greased, add more tapioca flour.

Grease the baking sheet with oil or cooking spray

Tear off about two centimeters of dough. With your hands, roll the dough into a small ball. Repeat with the rest of the dough till there are about 50 balls.
Step 12
Arrange the rolled balls onto the baking sheet. Make sure to leave about a quarter inch of space between balls.

Bake for 25 minutes or until the rolls have visible orange or yellow flecks and are firm to the touch
