BBQ Chicken with Cottage Potatoes and Bean Salad

BBQ chicken is always a favourite in our house. I particularly like this recipe because you can cook it on the grill or in the oven. Cottage potatoes are a summertime staple when our patio is open. Leave the skins on for the best flavour and don’t skip the sour cream - You’ll love them! A few extra pieces of chicken cooked today will help with Caesar wraps later in the week.
Unused BBQ Sauce can be stored in the fridge for up to 5 days.

For the Chicken
For the BBQ Sauce
2 cupsketchup
1 ½ cupsbrown sugar
½ cupcider vinegar
1.5 tblsworcestershire sauce
1.5 tblsmolasses
2 tspsalt
1 tspgarlic powder
1 tsponion powder
2 tspmustard
¾ tspsriracha
For Cottage Potatoes
1.5 lbspotatoes
small or new, cut into bite sizes

diced
1 tblsmontreal steak spice
Butter
sour cream
for serving

0.5red onion
thinly sliced
0.5green bell pepper
diced
0.5red bell pepper
diced
1rib celery
diced
1can chickpeas
drained and rinsed
1 canmixed beans
drained and rinsed
3 tblswhite wine vinegar
2 tblsvegetable oil
½ tspblack pepper
fresh cracked
1 tspsalt
½ tspcelery seed
0.5 tssugar
Instructions
For the Chicken
Step 1
Bring BBQ sauce ingredients to a simmer for 30 minutes,
Step 2
cool and refrigerate.
Step 3
Toss the chicken with salt, garlic and mustard. Store in a large ziplock bag or in a bowl in the fridge for 4-24 hours
Step 4
When it’s time to cook heat up the grill or preheat the oven to 450F
Step 5
Bring chicken out of refrigeration for 30 minutes before cooking.
Step 6
Cook chicken in preheated oven for 25 minutes or on indirect BBQ heat for 30 minutes
Step 7
Coat cooked chicken in prepared bbq sauce and return to the oven or bbq for 5-10 minutes until sauce is thickly sticking to chicken, Brush with a little extra sauce if you like or serve extra sauce on the side at the table.
For Cottage Potatoes
Step 8
Lay out a double layer of aluminum foil large enough to wrap the potatoes in to a packet.
Step 9
Toss potatoes with onions and montreal steak spice.
Step 10
Neatly and tightly bring the ends of the foil together and crimp them shut to create a tight leakfree sealed packet
Step 11
BBQ (or cook in a 450F oven) for 40 minutes. Turning the packet occasionally for even cooking.
Step 12
Rest the packet of potatoes for 15 minutes before serving.
Step 13
Open the packet carefully, steam is going to rush out and the potatoes will be hot!
Step 14
Serve with butter and sour cream
For Bean Salad
Step 15
Mix all of the salad ingredients together. This salad is best made at least 4 hours ahead to allow the flavours to develop but can be done as much as 24 hours ahead. Stir occasionally as it marinates in the fridge. Bring to room temperature and taste for seasoning before serving.
