You can use your favourite cheese for this preparation, as long as it’s not a hard one! My favourites are Fontina, Edam, Provolone and Gouda!

Instructions

Step 1
Cut your cheese into rectangles (2cmx5cm), place them on a plate and freeze for a couple of hours.
Step 2
In a bowl, mix rice flour with salt, baking soda and cold sparking water until your form a pretty thick batter.
Step 3
Dip your cheese into the batter and fry in some sunflower oil for a couple of mins or until nice and golden.
Step 4
Serve warm with some smoked paprika on top. Buon appetito!
