Step 1
Start from the chicken thighs, flour then and keep aside.

Chop onions, celery and carrots. Make small pieces so at they can almost melt completely during the cooking.

Warm up a casserole with some oil and when it is hot, put the chopped vegetables in it. Stew the vegetables for a couple of minutes and then ease down the chicken. Roast the chicken for 5 minutes each side or at least until it starts getting a browny texture.

Pour the white wine in the casserole and let it evaporate. Once the wine is evaporated add half glass of warm water and decrease the heat.

Add now the spices on your chicken, you can use both fresh or powders depending on what you have available. Stir and cover the casserole. Cook for 20 minutes then turn the chicken thighs and continue for another 20 minutes. In the casserole it is always necessary to have some liquids, something about 1cm or a little less. If it is too dry, add some spoon of warm water.

Once this time is passed, check whether the chicken thighs are well done. The cooking time depends on how big the thighs are. Cook the chicken for the last 5 minutes without the lid so the water part of the liquid can evaporate.
