Step 1
In a large pot over high heat, add olive oil, onion, and garlic, sauté for three minutes. Add in tomato paste and sauté an additional minute. Add in diced roasted red peppers, chicken broth and seasonings. Bring to a boil. Reduce to a simmer for 20 minutes. Cut the heat, then use an immersion blender or blender to blend the soup smooth. Stir in heavy, whipping cream, and serve.
