Instructions

Step 1
1° In a large pot, melt butter over medium heat.
Step 2
2° Add chopped onion and cook for 5-6 minutes.
Step 3
3° Add chopped ginger, broth and carrots.
Step 4
4° Bring to boil on high heat; cover and lower heat to simmer for 30 minutes. 5° Add the cream cheese and blend with an immersion blender.
Step 5
6° Remove from heat and season with salt and pepper to taste.
