Instructions
Step 1
Preheat oven to 350.
Step 2
Combine all dry ingredients in a bowl.
Step 3
In a separate bowl, combine all remaining wet ingredients, except for the figs.
Step 4
Mix the wet and dry ingredients together. Gently fold in the diced figs.
Step 5
Grease a mini muffin tin with coconut oil and add batter.
Step 6
Bake for 18-20 minutes, or until a toothpick comes out clean. If using a full size muffin tin, cook for 25-28 minutes.
Step 7
Store in a glass container in the fridge for up to 7 days.
