1ball fresh mozzarella
4slices white bread
crusts trimmed
2eggs
large, beaten, or more as needed
1 ½ teaspoonsminced garlic
1 heaping teaspoonfresh flat-leaf parsley

1 tablespoonolive oil
1clove garlic

1 x 28 ouncecan crushed tomatoes
sugar
kosher salt
freshly ground black pepper
1 tablespoonfresh basil leaves
chopped
1 tablespoonflat-leaf parsley
chopped, fresh
Instructions
Step 1
Cut the mozzarella into 1/4-inch thick slices large enough to cover two slices of bread. Save the rest of the mozzarella for another recipe. To make 2 sandwiches, top the cheese with the remaining 2 slices of bread and press down to compact.
Step 2
Season the eggs, garlic, and parsley with salt and pepper in a mixing bowl. Put the bread crumbs on a plate.
Step 3
Pour the oil to a depth of 1/4 inch in a large skillet over medium-high heat. When the oil is hot, dip each sandwich into the egg mixture, dredge in the bread crumbs, and fry until crisp and the cheese has melted, about 3 minutes per side.
Step 4
Cut each sandwich in half and serve with the marinara sauce on the side for dipping while still hot.
Marinara Sauce
Step 5
In a saucepan, heat the oil over medium-high heat. Cook, stirring constantly until the garlic is fragrant. Season with salt and pepper to taste after adding the tomatoes and sugar. Bring to a boil, then reduce to low heat and cook for 30 minutes.
Step 6
Stir in the basil and parsley after removing the sauce from the heat.
