Step 1
Preheat 375-degrees. Mix first 6 ingredients and set aside. Spray a 9x13-inch baking dish with cooking spray. Pour 1/2 can of enchilada sauce in bottom of baking dish. Place about 1/3 cup filling in each tortilla and roll to enclose. Cracks in tortillas are normal. Place seam side down in baking dish. Pour remaining enchilada sauce over tortillas. Bake for 20 to 30 minutes or until til heated thoroughly.
